5 /5 Rick Lehtonen: Best ribs in New Castle, PA. Ok, best ribs in the N.W. Pa region, and lets take that over into Ohio while were at it. Im not kidding even a little bit. This little place has a Cordon Bleu trained Chef and his wife turning out some of the meatiest, tastiest pork ribs Ive ever had. Anywhere.
Its where Scusties pizza used to sit on Highland ave in New Castle, across from DG. The ribs are low smoked and no sauce. Youre getting the real deal here, Texas style. The ribs are fully cooked, meaty, smoky (but just enough) and no fat. Zero. Nada. Juicy, but not dripping.
And not sauced. Thats not the TX way. Its just this deep smoky caramel color and flavor that comes from the meat and the pit master. This is some good stuff.
So, high fives all around. A place that fulfills my need for slow cooked pork ribs (and next week two lbs of beef brisket) the same way Gordos makes me happy about tacos.
Yep, I was waiting for Union BBQ to open just like I was waiting for Gordos Tacquerea to open last year. And I am just as happy.
Get in here, get the ribs, get the sides, and do it Friday - Saturday and Sunday until they run out, which will be happening often Im hoping.
