They will ask “allergy or preference,” and if you say “allergy,” they will change gloves and make your food in a separate space, but still in front of you such that you can see the whole process. There’s still a small risk of cross-contamination, but it is a sub shop after all. As far as taste goes, GF Wedge substitute for bread was good, the flatbread was not.
Now about the service- it took forever. I arrived at about dinner time on a Saturday and was in line for a long time. When it was my turn to order, I got the employee with a bad attitude. She has dark hair and a tattoo on the back of her neck of a skeleton hand giving you the middle finger. If you have the same misfortune- the trick is to MATCH HER ENERGY. Do not hesitate. Be blunt and loud and clear when you speak to her, just like she is with you. You will get what you order, if it’s GF it will be safe to eat, and the whole experience will feel like the “Soup Nazi” episode of Seinfeld.
The other employee there also helped with my order, and she was lovely.
